Beeker’s Brisket & BBQ Pork Belly Burnt End

Remove skin from belly, and cut into 1-inch cubes.
Season with favorite dry rub.
Place on wire rack.
Smoke at 250 for 2-2.5 hours or until golden brown.
Move pork belly to disposable pan and add half stick of butter (sliced and evenly dispersed), 1/2 cup brown sugar and 1/2 cup bbq sauce. Cover and place back on the smoker for another 1.5hrs.
