– Jalape\u00f1os: Halved jalape\u00f1o peppers are the base of this recipe. The
\nbigger the pepper the cheesier filling to fit inside! I like to remove all
\nof the seeds when I\u2019m making stuffed jalape\u00f1os since they carry a lot of
\nheat. Don\u2019t fret\u2013 these are still plenty spicy without the seeds.
\n– Cheese: We use a mix of cream cheese and shredded cheese for the
\nfilling. I used shredded cheddar cheese, but Mexican style or pepper jack
\nis also tasty.
\n– Garlic: 1 minced clove of garlic adds flavor to the filling.
\n– Paprika: Smoked paprika adds spice and bold flavor to the filling.
\n– Bacon: Each pepper is wrapped in bacon before baking.<\/p>\n
How to Make Them<\/p>\n
– Prepare the peppers. Cut the jalape\u00f1o peppers in half lengthwise.
\nRemove the seeds and center membrane.
\n– Make the filling. Combine both cheeses, garlic, and paprika together.
\n– Fill the peppers. Spoon the cheesy filling equally among all jalape\u00f1o
\nhalves.
\n– Wrap with bacon. Wrap a piece of bacon around each cheese-filled
\njalape\u00f1o. Stick a toothpick through the center to ensure the bacon stays in
\nplace.
\n– Smoke for 30-45 minutes at 225, long enough to let the bacon get
\ncrispy (you can even use the grill for the last minute or two to really
\ncrisp them up.)
