Bacon Wrapped Maple Glazed Carrots

A great Autumn dish that will get anyone to eat their veggies

A beautiful recipe created by Hey Grill Hey that is perfect not only as a side dish for Thanksgiving, but as a recipe for this Autumn season. This recipe works well on a Lang BBQ Smoker, especially hybrid models or models with the grill for high and fast heat. However it also works low and slow in the smoker itself.

Serves: 6 people
Ingredients
  • 3 pounds whole carrots
  • 1½ pounds bacon
  • ½ cup maple syrup
  • salt and pepper to taste
Instructions
  1. Preheat your indirect grill or smoker to 400 degrees F. This can also be done in an oven, if needed.
  2. Thoroughly scrub and peel each carrot. Wrap each carrot in a piece of bacon, overlapping the ends so they are secured. Sprinkle each carrot with salt and pepper.
  3. Place the wrapped carrots on the grill grates (or on a baking sheet, if using the oven). Close the lid and cook for 25-30 minutes or until the bacon is golden and crisp.
  4. During the last 5 minutes of grilling, brush the carrots with the maple syrup. Grill until the syrup starts to bubble, remove from the grill and serve.
Notes
Please note that cook time is for grilling. Time will be longer if cooking low and slow in smoker cooker.
